A student of W.B.M Zion Senior High School in Akyem Old Tafo in the Eastern Region has invented a gari Processing machine .
The student, Emmanuel Nimo’s invention when supported and manufactured in large quantities would help revolutionize the gari production industry in Ghana.
It will also help reduce the stress women go through in processing cassava dough to gari.
Management of the School will in the coming days provide details of how the invented gari processing machine works.
Gari Processing is the mainstay of millions of Ghanaian women in farming communities across the country. It is a source of livelihood for many families.
The absent of technological revolution to modernize the processing of the product has confined women to stick to the old traditional method of processing.
This old process is laborous, time demanding, dangerous and possess serious health risk due to the continues contact with heat radiation from the naked fire used to dry the cassava dough.
Gari is made from fresh cassava, which is grated and the excess liquid is then squeezed out through exertion of heavy object.
The remaining cassava is then fried on open fire, on a broad metal pan that has been greased with a little oil, could be palm oil or other vegetable fat.
The result product is crisp and crunchy to taste, and is stored easily and can be eaten with stew or soup or shito and fish.
Gari is most patronized by students in both secondary schools and tertiary schools to prepare soakings, that is gari mixed with water, milk, sugar and groundnut.
Gari is truly a versatile food and affordable too. It used as a side dish at many parties under the name of ‘Gari foto or eba.
